Chicken Pillows


I have seen other recipes of this, and thought I would experiment and make one of my own.  
It was truly Dericious!
(That's what we say when something is Really Delicious!)

Here are the things that you will need to make this tasty meal...
10 oz. Cream Cheese
3-4 Green Onions
2 Crescent cans
2 cans of Chicken Breasts
Roasted Garlic & Herb Seasoning
Seasoned Salt
2 strips of Celery

Now this is how you make it:
1. Soften the cream cheese
2. Drain the chicken and mix the chicken and cream cheese together
3. After cutting the celery and green onions into small pieces, add to the chicken and cream cheese mixture
4. Add 1 Tbsp of the Roasted Garlic & Herb seasoning
5. Add 1 1/2 tsp Seasoning Salt
6. Add 1/2 tsp Pepper

You have now finished the inner portion of the Chicken Pillows!

Next, add about a spoonful of the chicken mixture into one crescent roll...it will look something like this

After getting the chicken onto the crescent roll, roll it up however you would like, but I found this way to work best.  


Finally, place chicken pillows onto a cooking sheet and cook at 375° for 20-25 minutes or until golden brown.  



After cooking them, allow to cool for a few minutes.
Top with gravy and serve.

Pistacio Salad



In honor of St. Patty's Day...
Here is a family favorite recipe.  


1 can of Crushed Pineapple
(we bought the wrong can for this batch, but it was still delicious)
1 packet of Pistachio Jell-O
1 bag of mini marshmallows
12 oz. Whipped Topping

This is an easy recipe for anyone to make...you can even ask one of your kids to make it, because it is that easy!

In a large mixing bowl add the whole can (do not drain) of pineapple.
Add the Jell-O packet and mix with the pineapple.
Then add 8-10 oz. of Whipped Topping and continue to mix.
Finally, add about half of the mini-marshmallows.  You may continue to add more until you are satisfied with the consistency.
Refrigerate for about 1 hour to allow the Pistachio Salad to set.

Snickerdoodle White Chocolate Chip Blondie

This is a to die for recipe...I am not kidding!!!
Prepare yourselves for an amazing dessert to make for all to enjoy.



First, preheat over to 350° F.  

In a large mixing bowl:
1 cup butter (room temp.)
2 cups brown sugar
2 eggs
1 Tbsp. vanilla

Once all ingredients above are creamy add the following:
2 2/3 cup flour
2 tsp. baking powder
1 tsp. salt
2 Tbsp. sugar
2 tsp. ground cinnamon

With a spatula add 1-2 cups of white chocolate chips into the batter and mix until you are satisfied.  
*Mixing with a spatula keeps the white chocolate chips from breaking into smaller pieces.

Spray 9x13 pan with non-sticking spray.  Fold batter into pan and spread evenly on top.  If you want an extra kick of cinnamon sugar add some cinnamon sugar on top of the batter in the pan.  



Bake for 30-35 minutes.

Chicken Dorito Casserole



Ingredients
2 cups shredded chicken
1 cup shredded cheese
1 can Cream of Chicken soup
1/2 cup milk
1/2 cup sour cream
1 can RO*TEL
1 packet of Taco Seasoning
1 bag Doritos

Instructions
Pre-heat oven to 350°
Mix together all ingredients, except Doritos, in a bowl.
Grease a 9x13 pan and put a layer of crushed Doritos as first layer.  Follow with the half of the chicken mixture, followed by another layer of crushed Doritos.  Layer the other half of the chicken mixture and top with  more shredded cheese, if desired.

Banana Bread


I couldn't help but share a favorite video of mine that also expresses my craving of Banana Bread lately.
There is just something about warm banana bread with butter melting.
Ohhhh my mouth is watering right now!
After a long day of school in the fall or winter my sisters and I loved coming home to this for our afternoon snack before running around to all of our different activities.
I hope that you all enjoy it as much as I do!


I absolutely LOVE making little muffins to go along with a loaf of bread.

Preheat over to 350°F

Stir together:
2 cups flour
1/2 cup sugar
3 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Beat together:
1 egg
3/4 cup milk
1/4 cup vegetable oil
1 1/2 cups mashed ripe bananas

Mix wet and dry ingredients together.

Grease 9x5x3 loaf pan and then turn into prepared pan.
Bake for 65-70 minutes.

Enjoy the yumminess!

p.s. I use my very well trusted Kitchen Aid for most of my recipes.  It is such a wonderful help that I just had to take a few pictures to play around with the camera.

Ah-Mazing Burritos

As I was wandering through Target and talking to my mom the other day, a little something I had never seen before caught my eye.  It was this delicious looking package of taco seasoning.
I never thought that so much ah-mazing deliciousness could exist in one small package.
I mixed up this and got a few other sides ready for the YuMmY dinner we were about to eat.
One of the other best things about this meal was the tortillas.  Let me tell you...I am pick when it comes to tortillas.  At home I grew up with homemade tortillas and have always loved them.


Now that I'm married and don't have a tortilla maker, but I have found a great substitution...Tortilla Land Tortilla's!!!
They are soooo good!!!
And might I throw out the idea for a dessert with these bad boys...after getting it all warmed up add a little butter on one side and cinnamon sugar, roll it up and eat up. You will die with the ah-mazing ness in your mouth!!!



Back to the burritos now...get the meat all prepared, warm up the tortilla's, and get the sides ready.  Then it is ready to go!

Fudgy Cocoa Brownies


Here is a favorite recipe I love and everyone that has tried it loves it too! 
I got this while I was on my mission from my dear friend Kjirsten that I served with...we were known as the bakers on our mission.

1 cup butter
4 eggs
1 cup cocoa
2 tsp vanilla
2 cups sugar
1 cup flour
1/2 tsp salt

Preheat oven to 350° F.  Grease bottom of 9x13 pan.
Melt butter and add to cocoa.  Mix until thoroughly combined.
Add sugar and mix well.  Add eggs, one at a time, beating well after each addition.
Stir in vanilla, flour, and salt.
Spread in prepared pan and bake for 25-30 minutes - or until toothpick inserted in center comes out clean.

Perfectly Chocolate Frosting

1/2 cup butter
1/3 cup milk
2/3 cup cocoa
1 tsp vanilla
3 cups powdered sugar
Pinch of salt

Melt butter.  Stir in cocoa.
Alternately add powdered sugar and milk, beating on medium speed to spreading consistency.
Stir vanilla.  Add more milk if needed (it will make about 2 cups).
